We are fortunate enough to live less than a mile away from a CSA! It’s great, it always provides us with inspiration for our meals, as well as challenges. For weeks on end, our winter shares have brought us plenty of different roots, from sweet potatoes to turnips, kohlrabi and beets. In an effort to change things up, we decided to mix up our roasted beets with some of our other favorite ingredients. The rich color of this dish is from betalains which have both antioxidants and anti-inflammatory properties. We’re excited for you to try it.
